Cinnamon Espresso Chocolate Chip Cookies
Favorite. Hands down. The brown butter + cinnamon + espresso combination is not only delicious, it makes this cookie the perfect compliment to a cappuccino. I am admittedly a bit partial to espresso and cinnamon, but I really think that this cookie is something of a masterpiece (provided that you also like those two things). And if you like cappuccinos, forget about it.
16 T butter (browned and brought to room temperature)
2 1/4 cups flour
2 t cinnamon
1/2 cup white sugar
1/2 cup dark brown sugar (tightly packed)
1 egg + 1 yolk
2 T espresso (room temperature)
1.5 t vanilla
12 oz chocolate
Brown the butter and let it cool to room temperature.
In the bowl of a stand mixer, cream the butter and the sugars then add the egg and yolk, the vanilla, and the coffee. Mix until smooth. In another bowl, combine the other dry ingredients, then add gradually to the other ingredients. Last, fold in the chocolate chips (by hand). Refrigerate the dough for 12 - 36 hours before baking.
